    Latent heat

    Amount of heat released during phase transitions such as freezing, melting or evaporation or taken up without changing the temperature of the substance. For example, the cool feeling when you sprinkle the soil with water on warm days sets in because the evaporating water removes the latent heat from its surroundings. Phase transition temperatures of a substance can be determined by measuring the changes occurring in the temperature.
